Salt needs acid, not sweetness. Once you accept that, the list of things worth pouring beside a six-month cheese gets short and quite specific.

At 7% brine, feta arrives with a heavy saline load that dulls the palate within two or three bites. Acidity cuts that load and returns your sense of the milk underneath; residual sugar does the opposite and leaves the whole thing cloying.
That is the entire rule. Everything below is an application of it.
Six months in beech adds a faint nutty, almost wood-spice note that tin-matured feta never develops. It gives the pairing something to hold besides salt, which is why lightly textured wines work here and fail with younger cheese.
Serve the cheese at room temperature. Straight from the fridge the aromatics are shut down and any pairing reads as merely cold and salty.
Oaked Chardonnay: the vanillin collides with the wood note and both lose. Off-dry Riesling and most dessert wines: sugar plus salt turns to soap on the finish.
Big tannic reds are a distant third problem — tannin and salt sharpen each other until everything tastes metallic.
Five things to pour
Santorini Assyrtiko
Unoaked, high acid, faint salinity of its own. The reference pairing — the acid resets the palate between bites and the mineral edge runs parallel to the brine.
Malagousia
More aromatic, peach and basil. Works when the feta is served warm — baked or grilled — where a little perfume lifts the dish.
Xinomavro rosé
Tannic enough to matter, dry, with tomato-leaf bitterness. The one red-grape option that survives this much salt.
Dry Greek retsina, modern style
The resin note reads as pine rather than varnish in current bottlings, and it sits naturally beside barrel wood.
Pilsner, well chilled
Carbonation and bitterness do the work acid does in wine. Best with fried or grilled cheese rather than raw.
