Taste

Lactic and clean up front, then a long saline finish with a faint hazelnut note from the wood. Less aggressive than tin feta at the same salt level.

Keeping it

Store submerged in its brine, covered, at 4 °C. If it dries it goes chalky within a day. Top up with 7% salted water, never plain water.

Using it

Bakes without collapsing, grills in thick slices, holds up in a warm salad. Crumble only at the last moment.
